Tom Robertson started at Another Broken Egg Cafe as a Regional Franchise Consultant and worked his way up to his current position as our Director of Operations. In this role, Tom leads both franchise and company operations, focusing on the operational excellence that helps bring our unique cafe experience to life. Before joining Another Broken Egg, he gained his breakfast/brunch expertise opening new locations as a Franchise Consultant for Huddle House in the Mid-Atlantic region. But the bulk of his restaurant background comes from spending 18 years working under the Applebee’s umbrella in various positions ranging from Kitchen Manager to Franchise Consultant to VP of Operations, where he ultimately supported 84 restaurants in six states. Tom’s corporate restaurant career began at Steak and Ale in Atlanta, Georgia, running one of the brand’s highest volume locations.
